- How I came to like my hair.

Growing up, as I frequently wanted a new something, my mother would say: "Ah, humans' greed knows no limits."

(When I desire a new purse or a cute pair of shoes, these words haunt me to this day... lol.)

Lately I've been thinking those words were very true.

We are often greedy and desirous of things we don't already have. Once we have basic food, shelter and clothing, we're always seeking that something extra.

It could be a nicer car or a bigger house. It could be a wrinkle-less face (can such a thing exist?!); if you are pale Caucasians you want "sun-kissed" tanned skin, whereas Asian women want pale skin. (I guess this came about from the long-standing classism, where the rich could vacation in exotic resorts or, in Asia, the rich could have helpers that they didn't need to labor outside.)

Today, as I was drying my thin, brown and wavy hair, I was thinking about such things.

My hair has become more wavy as I got older, but it's not committed enough to be called curly. It's mostly fuzzy and goes in random directions. As I grew up in Japan, I was always envious of the typical Japanese hair type: full, thick, straight and black. There aren't too many curly-haired people there. Most of the time, I blow-dried it straight.

In my mid-30s, I've come to like my hair more. Since I often don't have enough energy to blow-dry my hair, I've kind of let it be on many days (when I'm feeling well enough to shower). I've come to think, "Hey, people pay good money to perm their hair, to make it curly."

There are also other reasons I've come to appreciate my hair.

Last year, I had a chance to talk to a friend from elementary school -- we were close when we were in 2nd grade, and we hadn't talked to each other in decades. I happened to learn that she had struggled with alopecia since age 13. Alopecia universalis (hair loss of whole body) is an autoimmune disease like my celiac disease -- your body attacks your own cells for no known reason. To someone like her -- who lost all her hair including her eyebrows and eyelashes -- my gripes about having thin wavy hair or unwanted body hair are, in short, luxury.

After learning about her condition, I thought about growing and donating my hair to one of those organizations that give real-hair wigs to kids struggling with alopecia or going through chemotherapy.

But I wondered: Is my hair nice enough? I always had a complex about my hair being thin and uncommitted-ly wavy. So I asked my hairstylist, Tim (who happens to be a cancer survivor), "Is my hair nice enough to donate...?"

His answer was an enthusiastic "Yes!" He radiates optimism, and I love him for it. "Of course! You have nice hair. Are you kidding? You can curl it easily if you wanted to, you can blow dry it straight easily if you wanted to. What you have is nice, versatile hair. Whoever gets your hair would be very lucky." I never thought of it that way. I was always wanting things I didn't have: straight hair, curlier hair, or more hair. I had nice hair all along. He made me realize it's all in how you look at something -- in this case my hair.

To make a wig, they need hair from multiple persons. So if donated, my hair will be mixed with others' hair. As such, even my thin hair, when grown, could be somebody's bangs or something :-) After hearing Tim's words, I decided to grow out my "nice" hair. (I'm hoping that by publicly saying this, I wouldn't be tempted to chop it off as I usually am when it goes past my shoulders.)

There are many ways to look at one thing. For instance, our place is small (636 sq. ft.) by American standards, but it's energy efficient -- so the heating cost is low and it's always warm. (This is nice for me, because I'm always cold from hypothyroidism!) We could have a bigger house, and more storage space is nice, but it seems cold in bigger houses, and there would be more expenses and more to keep up/protect. In this economy we could lose a job, and if you have to move to a small apartment instead of your own place, it seems more shocking if the move is from a big house. As it is, such a move doesn't seem that traumatic for us.

When I babble about such things it may seem like I'm promoting a virtuous lifestyle absent of materialism. I wish I could (I do realize less stuff makes life simpler), but as a known shopaholic, I couldn't really change myself that much. Cute shoes are my Prozac!

I don't really have a logic to back it up, but I think a little luxury is a good thing. Little things that makes us, and those around us, a little happier -- like our hobbies, books, flowers, little gifts, good food, or tea/coffee you have with your friends. I also think it's all right to be a little greedy about things you can do or change about yourself (like your ability to do something). Because if you aren't happy yourself, you can't make others happy either.

Sometimes, we learn about happiness by losing something. So it's not exactly a waste or loss to be sick. Things I used to take for granted -- for example, being able to swallow without pain, being able to get up without pain, being able to sit, walk, or run -- I learned those are precious. Before, I would go out to a nice restaurant and critique the dessert chef (kind of obnoxious when you think about it, considering I'm not much of a good cook myself). After learning I couldn't eat dairy, eggs or wheat, eating a scoop of coconut milk ice cream or a dark chocolate bar seems so decadent and awfully luxurious.

Maybe, just maybe, these conditions and allergies were gifts of wisdom from up above, to a girl who was whining about things she didn't have.

Hazards of being polite -

Weather: Overcast; 61°F (Again! It must mean it's 16 in Celsius)
Energy Level: 2.5 out of 10
Mood: 4/10
Health: 2.5/10
Human beings are not unlike Pavlov's dogs. Now that I rolled around on the floor with excruciating stomach pain last night from eating something, I'm instinctively afraid to eat. But the advantage of being human is that we can at least try to reason ourselves and hopefully dissociate such fear from the neutral context, which is eating in this case.

I bet I know what happened. We attended a luncheon/reception in a very formal/Japanese setting yesterday. My personality becomes more timid when I'm operating in a Japanese context speaking Japanese, probably in an attempt to be more polite and conforming. So I didn't ask about ingredients in every dish I was eating - I did pick what looked safe (fruits, sushi w/ no soy sauce, what looked to be aroid - a Japanese potato - cooked just in dashi or Japanese soup stock) and asked about the safe-looking chicken (cooked with garlic, salt, pepper), but I wasn't overly explicit. The asking took the staff member to go ask the head chef in the kitchen; it seemed like a lot of trouble and I didn't want to be the fussy one. I think I also picked up the aroid dish with the same serving chopsticks used to pick up the stewed meat next to it (most likely cooked with soy sauce).

The result is that I was sweating beads and tangled with pain for hours; I almost considered going to the emergency room (the pain started to subside after 2-3 hours, but I was still up till 5 AM). I'm still in pain. Being polite was not worth this much trauma.

The lesson: Have a thicker skin and be assertive. That way the next meal wouldn't make me cringe just at the thought of eating.

Re: Gluten-free cosmetics (additional info) -

It took a few days, but I just heard back from Clinique about their lipstuffs (I just made that word). So their formulations (in regards to gluten) are not shade specific.

Here's their reply (I made the relevant part red):
===================================================
Thank you for your interest in Clinique.

While a formulation may contain no wheat, oat, barley or rye derivatives, for the benefit of our gluten-sensitive consumers who may have cross-sensitivities, Clinique takes the extra precaution of including corn, rice and soy in our research.

A vast number of raw materials from many different suppliers and sources are used in the manufacture of Estee Lauder Companies' products. It is therefore not possible for us to fully guarantee that our products are completely free of ingredients that may elicit an allergic response in highly sensitive individuals who react to gluten. For example, it is possible that small amounts of a wheat sourced ingredient may remain on shared manufacturing equipment even after a thorough cleaning. We therefore recommend that you discuss this with your physician, because consumer safety is of utmost concern to us.

With regard to your inquiry, gluten is not shade specific. Colour Surge Lipstick contains corn and soy. Superbalm Tinted Lip Treatment contains barley extract and wheat germ extract. Full Potential Lips Plump and Shine contains soy. Almost Lipstick does not contain gluten.

We trust that the above addresses your concern. We hope you will look to Clinique for all your skin care needs.
===================================================

Hmm. It sounds good, but they're basically saying, "We try to be careful, but look, we're a big company with lots of subcontractors - so whether you want to take a risk with cross contamination is up to you." I do like their Almost Lipstick line... tempting, but Daniel would probably tell me to err on the safe side.

On the other hand, Kiss My Face brand says in their FAQ section:
===================================================
Q:* Do your products contain Gluten?

A: No, most are gluten-free. Here is the list of products in our line that DO contain Gluten:

[Then they list a bunch of products which contain gluten.]
===================================================

Very nice! I like this company. (But I just found out one of the shampoos I use is in this list. Oops.)

All in all, it seems that I just have to research some and decide if I trust a product/company, just as I would with food (except the labeling standards are not the same, since cosmetics don't need to list up common allergens). Looks like Kiss My Face earned themselves a trusting customer :-)

Unlike severe peanuts allergy, I'm not going to die from it right then and there. (Obviously, seeing how I used to eat regular bread. Bread! Made from wheat flour! Wow, how I was wringing my own neck.) The effects are invisible, because it has to do with the damage on the inside of small intestine - so it is possible to be not strict about it. Seeing that celiac disease has probably knocked me out as a warning, though, keeping my (conventional) makeup for hours of vanity is probably not worth it.

It's like I've got an extra heart in a video game of life (by having met good doctors and solving a celiac disease puzzle!) - and I'm not going to waste it.

P.S. Estee Lauder brands include Estee Lauder, Clinique, Prescriptives, Origins, M.A.C., Bobbi Brown and Aveda among others - for a complete list click here.

===================================================

===================================================

Um, can you say that in the earthling language? -

Weather: Sunny! Clear! 76°F!
Energy Level: 3 out of 10
Mood: comme ci, comme ça (been on a French kick lately... maybe I'll study it again)
Health: Eek. Alive. I always vow not to overdo it on weekends, but I end up recovering from weekends during the week...

↑ The look I'm going for.

I've been trying to clean out my cosmetics drawer, so not to negate all my other treatments. This is hard.

I'm a sucker for cutely-packaged cosmetics. I think this addiction was exacerbated by the fact my late aunt used to lure me with department store gift certificates (a certified shopaholic, she had a "savings" account with department stores, which resulted in store merchandise certificates at the end of a term = more shopping) in my youth. Unable to afford
über-overpriced shoes or clothing in a Japanese department store with these store notes, I usually stocked up on shiny cosmetics.

Having moved to a short walking distance away from a Sephora store (for those of you who don't know, it's like FAO Schwartz of cosmetics) and a drugstore, I've racked up a healthy collection of lip stuff. I don't wear much makeup usually, but some of them make me feel happy just looking at them and playing with them once in a while. The cosmetics drawer was like my toy box.

Until now. Now it contains potential poison.

My super nice parents(-in-law) in Maine sent me this definitive book on celiac disease, written by the director of Celiac Disease Center at Columbia University and a science writer who has celiac disease. I've been reading bits of it when I'm not dizzy, and in it they talk about cosmetics.

The book says I can't have any lip stuff with gluten in it, because you ingest much of lipstick/lip balm/lip gloss. Makes sense now that they mention it - if less than 250 mg of gluten can set me back, this could be bad. (There seem to be conflicting opinions about skincare products, body shampoo, etc., depending on whom you ask in which country - for now I'm avoiding obviously wheat-y, barley-y, oat-y personal care products.)

Hmm.

I've obviously thrown out most of the packaging of what I'd bought in the past. Am I going to spend hours on the phone with each cosmetics company? It hardly seems worth it. But some of them are my favorite colors!

I've written to a couple of companies, one of which is
M•A•C Cosmetics. Apparently, even if something is in a same product line, each color has different formulation. So I need to ask about each color.

You typically get a response like this (no, they didn't highlight the wheat part red) - FYI, "Lip Conditioner" is just a fancy lip balm:

=========================================================
Thank you for taking the time to contact us and for your interest in M.A.C.

In response to your inquiry, here are the ingredients for Lip Conditioner
SPF 15.

=========================================================

Who knew a lip balm could contain so many things? (And what the heck is
ASTROCARYUM MURUMURU BUTTER anyway?) This makes you appreciate that ice cream commercial they used to have, where the kids are trying to pronounce ingredients in one of the ice creams and the other one is made from milk, sugar, etc.

During these exchanges, I learned:
triticum vulgare (wheat) germ oil/extract = bad
hordeum vulgare (barley) extract = bad

Then I came across a list of suspect grain-containing cosmetics ingredients on one of the forums at Celiac.com (this was included in a response to someone else from Garnier, and as you can see, it doesn't include
hordeum vulgare - so it's not a complete list):
  • Avena Sativa (Oat) Kernel Flour (ha, this must be where Aveeno comes from!)
  • Cyclodextrin
  • Dextrin
  • Dextrin Palmitate
  • Hydrolyzed Malt Extract
  • Hydrolyzed Oat Flour
  • Hydrolyzed Vegetable Protein
  • Hydrolyzed Wheat Flour
  • Hydrolyzed Wheat Gluten
  • Hydrolyzed Wheat Protein
  • Hydrolyzed Wheat Protein/PVP Crosspolymer
  • Hydrolyzed Wheat Starch
  • Maltodextrin
  • Secale Cereale (Rye) Seed Flour
  • Triticum Vulgare (Wheat) Germ Extract
  • Triticum Vulgare (Wheat) Germ Oil
  • Triticum Vulgare (Wheat) Gluten
  • Triticum Vulgare (Wheat) Starch
  • Wheat Amino Acids
  • Wheat Germ Glycerides
  • Wheat Germamidopropalkonium Chloride
  • Wheat Protein
  • Wheatgermamidopropyl Ethyldimonium Ethosulfate
  • Yeast Extract
Yikes!

For those of you who might be curious:
  • M.A.C. SlimShine Lipstick in color Elegant contains hordeum vulgare (barley) extract, triticum vulgare (wheat) germ extract and soybean extract = REALLY BAD
  • M.A.C. SlimShine Lipstick in color Bare contains ascorbyl palmitate (corn) and caprylic/capric triglyceride (soy) = Seems OK
  • M.A.C. PlushGlass in color Nice Buzz does not contain gluten (yay)
  • M.A.C. CremeStick Liner in colors Creme O' Spice, Gengerroot, & Sublime Culture, do not contain gluten (yay)
Although, as I called other companies, they basically told me they can't guarantee anything to be gluten-free unless it specifically says so. (Perhaps there might be cross contamination/possible change in product formulas?)

Maybe I'll stick to a plain beeswax lip balm and this Bare lipstick for a while. Apparently the more "long-lasting formula" a lipstick is, the more likely it would be to contain wheat (or barley). So Gwynn, who also can't eat gluten, was telling me when you get the organic/all natural stuff with no gluten, it lasts for about 1 hour (tops) and it seems to be gone from your lips. (Goes to show how much of the stuff you ingest.)

So maybe I won't be a red-lipped siren. Oh well. Whenever I put on makeup I looked like a kid playing with mom's makeup most of the time anyway; so maybe this is another blessing in disguise, to simplify my life...

-A
(Again too tired to do the Japanese part - maybe tomorrow!)

P.S. Yay, all Softlips lip protectants are gluten-free!

P.P.S. Note to self or others who may be interested: Maybe you can start a business making gluten-free cosmetics.

triticum (コムギ属) vulgare (植物学で胚芽という意味のようだ)

The best spinach salad, EVER -

Weather: Cloudy; 69°F
Energy Level: 3 out of 10
Mood: Pretty good - mellow.

↑ Our Hug salt and pepper shakers.

Update: I'm a wee bit less dizzy now. This cloudy weather helps. :-) Apparently it may have to do with the balance between my low level of cortisol and the thyroid medication. My doctor is on the case (waiting for lab results).

Imagine this:

It's about lunch time, and you are sitting around the tables at a cooking class. You're slightly hungry. You've just heard how great olive oils are made in Italy, how vinegars are made, and about different types of greens and how to handle them. You've passed around a bit of exquisite balsamic vinegar ($40+ bottle) and tasted some; you've also passed around some fresh herbs from the teacher's garden as well as a great Dijon mustard from France ($31 jar) to smell them.

Then the teacher, whipping out a gorgeous Portabella mushroom probably from the local farmers market, chops it really quickly and starts sautéing the mushroom pieces on a pan. The buttery smell of mushroom fills the room. About the same time, she opens a package of thick bacon slices, chops them up, and starts sautéing those in another pan. The thick bacon smell now wafts through the room, complete with the sizzling sound. She assembles the beautiful salad - baby spinach, green onion, bacon, mushrooms, along with the balsamic dressing she made with fresh marjoram and the Dijon mustard. We've passed around bowls and folks, and are practically licking our lips.

That's when she GRATED a hard-boiled egg into the mix, using a Microplane.
(Which, I must admit, is a neat trick, if you're not allergic to eggs.)

I was aware the recipe contained an egg - something which causes a massive IgG antibody reaction to attack my own body, according to a recent blood test (I didn't know, since I never broke out in hives or anything). But the other two salads we were making were Caesar salad (with egg & Parmesan cheese - a.k.a. dairy, which I'm apparently even more allergic to than eggs) and Greek salad (feta cheese), so I'd thought to myself, "Maybe she'll slice the hard-boiled egg, and perhaps I can just take off the pieces of egg from spinach leaves?"

No such luck - now the egg was in a fine powder form, tossed into the beautiful salad. I did vow to scrape the egg off spinach leaves as much as possible, but the temptation was too great not to eat it. (I'd told the teacher about my allergies, but she said since it was a big class she was unable to make a separate batch.)

For what it's worth, it was maybe the best tasting salad I've ever had. Okay, maybe the hunger and sitting there while the bacon cooked helped. I think the great ingredients also played a part, too.

After attending the class which taught us all the basics of creating your own dressing/marinade from various oils, vinegars/acid (e.g. citrus juice) and flavorings (e.g. herbs, garlic, etc.), Daniel and I were inspired. So we re-created the spinach salad, sans the egg. I think it was much better with the egg, but since the last one gave my stomach one-to-two-days worth of trouble (hey, it was better than when I ate gluten), it wasn't worth it for us. Ç’est la vie.

Still, it's a very good salad! Makes me eat a ton of spinach like Popeye!

Here's the recipe (this makes a LOT of salad - good for a potluck - you could probably half it or just decrease the amount of spinach, if you are just a couple of people like us):

Fresh Spinach Salad

Ingredients:
  • 1.5 to 2 lbs tender spinach leaves (I personally think this is way too much - 15-20 oz of baby spinach should suffice)
  • 6 lg. shiitake mushrooms or any fresh mushrooms (we used one Portabella and a couple of shiitakes. Portabella goes really well with this.)
  • 1 bunch green onions, chopped
  • 1/2 lb. bacon, chopped (could be something else with smoky flavor, like salmon - if you're vegetarian, you could use veggie bacon, etc.)
  • 1 egg, hard-boiled (omit if you are giving it to Aya)
  1. Hard-boil egg and set in cold water to cool then peel.
  2. Wash the spinach in a large bowl of cold water (even if it says triple washed or whatever!), stem the leaves (if necessary) and spin dry.
  3. Slice the mushrooms thickly (or cube, if you've got a huge Portabella) and briefly sautée in unsalted butter or a neutral-flavored (such as canola) oil.
  4. Sautee the bacon in a skillet (until crisp or not, your preference - apparently it's only Americans who sautée bacon till crisp; we preferred it with a bit of texture left), drain oil in the skillet or put on paper towel to drain.
Balsamic vinaigrette ingredients:
  • 1/3 C. Balsamic vinegar
  • 1 C. olive oil (pure, as opposed to extra virgin - extra virgin would be too heady and would fight too much with other flavors; while you pour the oil in dressing, you may want to decrease this amount depending on your preference)
  • 1 clove garlic, crushed
  • 2 tsp. fresh marjoram, minced
  • 2 tsp. Dijon mustard, coarse style
  1. Put the acid (vinegar) in a bowl and whisk in garlic, marjoram and mustard.
  2. Slowly add the oil in a steady stream, whisking constantly.
  3. Toss with spinach, mushrooms, chopped green onions, bacon, crumbled egg and serve.
Yum! It sounds like a simple salad, but the balance between the sweetness of spinach/marjoram/mushroom/egg and the sharpness of green onion/garlic/Balsamic vinegar/mustard is just right.

Maybe I will eat before the cooking class next time.

Our first *very* gluten-free chai -

Weather: Cloudy; 63°F
Energy Level: 4 out of 10
Mood: Kind of in a haze with the continuing headache and sleep deprivation...

↑ This
became
this. ↓

Sweet.

(I guess chai should be normally gluten-free by definition - so it's not something to be overly proud of, but since lots of chai mixes have mysterious natural flavors, I got to have fun with this.)

In case anyone is interested, here is the recipe I followed - I added coriander for the heck of it because I had some, but that wasn't in the original recipe (the recipe is kind of a mishmash of what I found on the Web and what Scully told me). I think I might add more ginger next time since we like ginger.

Ingredients
  • 1 T fennel seeds
  • 6 green cardamom pods
  • 12 whole cloves
  • 1 cinnamon stick
  • 1/2 inch ginger, peeled and thinly sliced (that's what it said, but I might skip peeling next time...)
  • 6 black peppercorns
  • 6 coriander seeds
  • 7 C water
  • 2 T loose black tea (you could probably add more depending on what you like; stay away from delicate ones like Darjeeling for this recipe since cinnamon and ginger would overwhelm it.)
  • 3 T honey (this doesn't result in super sweet tea like the ones you might get at Starbucks - the result is more mild with spicy kick. You could put 4 T brown sugar.)
  • 1 C almond milk (any milk)

Since I can't drink regular milk, I made it with unsweetened almond milk. Scully suggested that I might add saffron to make up for the fact my plant-based milk would not be as rich as regular milk. I've always believed the European conventional wisdom that saffron is expensive, but apparently it's quite reasonable if you go to one of the Indian/Pakistani stores in the area. Learn something new every day! Next time I think I'll go to one of those to stock saffron (and other spices).

  1. Grind up spices in a mortar and pestle. (Even better if you dry roast them in a pan beforehand.)
  2. Combine spices and water in a saucepan.
  3. Boil 5 minutes.
  4. Remove from heat and steep about 10 minutes.
  5. Add the tea and bring to a second boil.
  6. Reduce the heat and simmer for 5 minutes.
  7. Strain the mixture and return it to the saucepan.
  8. Add the honey and milk, stirring to dissolve.
  9. You got 8 lovely cups of chai!
Note: Some believe fennel should be added at the last minute, after the second boil. Since we're beginners and still experimenting (and it was late), we didn't discriminate.

I'm sure there are a lot of different ways to make this. I hear each Indian household usually have their own recipe. I'm open to suggestions/tips!

Yummy!
-A

P.S. I think I'll take a break from the computer this weekend - too much typing during the week; now my hands and arms really hurt :P

P.P.S. On second try, we added a piece of star anise and a couple of strands of saffron - made the flavor round and sweet. Yummmm.

La vita è bella, again -

Weather: Cloudy/Rain Shower; 66°F
Energy Level: 4 out of 10 (improved!)
Mood: Pretty groovy except for the headache :-/

A night (well, 4 hours) of sleep can do amazing things. (Sorry about the whining yesterday!)

In Japan they say "The crow who was crying moments ago is already smiling" (don't ask me why it's a crow) to describe how human emotions can change so quickly. I'm that crow today; last night everything seemed overwhelming, and today I feel like doors opened up to new opportunities.

I tend believe in subtle signs (mostly when they are working in my favor), and the signs were pointing in a good direction from the start. It's one of those great cloudy days in Seattle. We live atop a coffee shop where my massage therapist/friend Jonathan used to moonlight at, so I stopped in to get him a cappuccino so I can thank him for making me feel good. I figured, what the heck, I'll ask again about their version of chai mix. Low and behold - no "natural flavors!" Morning Glory Chai is made with just tea and spices. Yippie! I can have their chai (with rice milk even) - I'm so glad I didn't chicken out and talk myself out of asking.

Also I was thinking back to the conversation I had with the physical therapist for FMS Research Program, Scully. When I whined about not being able to get chai tea from the coffee shop, he laughed and said, "C'mon, you have to make your own chai from grinding spices with a mortar and pestle!" I have to give it to him - although he is now newly married to a lovely Indian lady, he has apparently been making his own chai for years. I got the instructions, thought about it, and figured it would probably taste better, the experience richer. So when Daniel comes home tonight, I'm starting from grinding whole spices in a mortar and pestle. What a wonderful experience - I probably wouldn't have done such a thing if I didn't have celiac disease. It's almost like it's a blessing.

I mean, what are the chances of talking to someone who is an expert in making your own chai tea right after being denied a generic one? (OK, maybe the chances are bigger in Seattle.) It's a sign.

I think I'm getting signs pointing me to slow down and live a little (not that I wasn't slow before, but since I'm slower than normal folks, even slower). The fact I can't eat out as much? Maybe I should learn how to cook better, be more efficient in the kitchen. (I'm not a very good cook although I'm very good at eating.) After all, we are what we eat. Maybe it's a sign that if I take these steps now and learn how to eat better, I'll have a much better life in the long run.

So I looked into some cooking classes around town. It just so happens we live across a cute boutique kitchen shop called Cook's World, where they offer cooking classes in the back. (And we are Cooks by name!) I think this is all meant to be. If we hadn't lived here, I wouldn't have seen the naturopath who practiced in the same building, and I wouldn't have found out I had celiac disease. And we live across the street from the cooking classes I want to take. How cool is that? Daniel wanted to take it, too, so we will take the classes together starting in July :-)

I got a giant piece of ginger, too, to try to pickle some ginger for sushi. If I can't eat the generic stuff, I figured I'll make some! I bet it'll taste fresher.

My mom sent me some good looking mochi (sweet sticky) rice and red bean paste, so maybe I can make some bean cakes one of these days. That would be another thing I wouldn't have done if I hadn't gotten sick. I'm not saying everything will be peachy all the time; I'm sure I'll hurt a lot some days, but I think my life overall will continue to be richer because of this experience.

Isn't life beautiful? :-)

Getting used to looking like a nutjob -

Weather: Cloudy; 65°F
Energy Level: 3.5 out of 10 (climbing!)
Mood: Kind of sad :-(
(...Maybe feeling the aftereffects of gluten and feeling bad has something to do with it, though.)

Up to this point, other than the brief period in my life when I had a fixed broken cheekbone and half my face paralyzed, (I think) I've looked pretty normal to others for the most part.

Now that I've opened up the Pandora's box that is flavoring/coloring in foods and drinks, eating out or just getting a simple drink from a coffee shop has suddenly become increasingly difficult - most of the time I look like a crazy person.

I'll give you an example.

Today I was at the UW clinic to meet with the healthcare psychologist and physical therapist for the FMS Research Program. I found out I had 15 minutes between the two separate meetings, so I figured I'd get myself a cup of tea at the little coffee shop inside the clinic.

I guess I should've aimed for something simple like black tea or water, but being a variety seeker, inevitably I craved Chai tea. (I have some irregular heartbeat or something, so my doctor told me to avoid coffee - decaf or normal - which makes my heartbeat funky.) But here's the question: what's in their Chai mix? (The sticky point being every place could use something different.)

So I asked (I figured this info would come in handy in the future) to see the ingredients on the huge pump bottle they brought out, and there they were, those evil two words: "natural flavoring." What does that come from? For all you know, it could come from malt (barley) or glutamate (wheat). Damn it.

Then I moved onto the tea list. Chinese White Plum - that sounds good. Can I see the ingredients list? The employees don't even know where that might be located - oh, it's on the individual tea bags, not on the box. I pull out a tea bag. "Natural Flavor." Never mind; that doesn't work, either. Orange Spice? That doesn't work, either. Okay, I'll just have English Breakfast (decaf), please.

By this time there are people in the line looking at me - I let some people go ahead, but in their busy lives, they are clearly annoyed and don't have time for this nonsense. They're probably thinking, "what's this paranoid lady doing?" I feel like turning back to explain to everyone - "You see, I have this thing called celiac disease, and I have to be very careful or I'd get sick." But then they're probably not that interested in the reason for my craziness, and they might also think, "Then why don't you just get water or something? Why didn't you bring something with you?"

I guess I still want spontaneity in my life, as well as variety (also I can't plan for everything). But how do I balance that with being looked at like a crazy person each time I seek new/varied experience?

Daniel has shared with me much of the trauma, I must say. When I'm feeling not up to getting up and about, he sometimes gets me food from the nearby Japanese restaurant. He's had to ask a lot of questions - each time we learned something new about a potential gluten-containing ingredient. "Is your rice vinegar made with all rice, or with other grains?" "Do you pickle your own ginger or do you buy in bulk?" (if bought from a wholesaler it almost always contains "flavors/amino acids.") "Does your wasabi contain any wheat?"

(I couldn't really blame restaurant employees if they thought we are a pain in a butt. I might have thought the same thing a decade or so ago in my youth, when I had been a restaurant employee, if such a customer had shown up.)

A lot of times, restaurant employees are not the best English speakers, whether we go to a Thai or Vietnamese or Japanese restaurant (although at least at Japanese restaurants I can try to explain - even then it's hard to get the concept across). So when we say "gluten," it doesn't really register. "Wheat" goes much easier, but the thing is, it's not just wheat. Also with imported foods, labeling is not the best, either.

Asking to see their bottle of fish sauce seems a bit over the top, so we usually ask, "is there any wheat in it?" - knowing in the back of our heads that question may not cover all the bases. We need to learn about food preparations and ingredients much more, so we can foresee what might be dangerous in a dish. Otherwise at every place I might have to order a plain lump of chicken with a side of steamed vegetables. Appetizing, no?

I've also bought and tried these "dining cards" which describe gluten and celiac disease in different languages, so I can show it to restaurant staff. A lot of times they just glance at it, not really read it, and kind of give us a weird look saying, "so what do you want exactly?" I'm sure they're being as helpful as their time allows. I feel like shrinking at that point, imagining them thinking, "so why did you decide to eat out as opposed to eating in?"

And cooking has not been the easiest of things to do with fibromyalgia. It hurts my legs and feet to stand; hurts my wrist and back to reach and get ingredients out; hurts my neck and back to bend over to wash things; hurts my fingers to hold the knife; hurts my arms to chop; hurts my shoulders to watch over pots. By the end my body is aching everywhere, and I sometimes feel like "why did I start this, again?"

So I might eat (gluten-free) cereal for lunch. Either that or I'll just have to learn to grow a thicker skin, so I'm used to being looked at like a nutjob (being a variety-seeking glutton, I have a feeling that's what I need to do). I am learning how to cope with pain better and also relax my muscles so I don't brace myself and tense up before/with pain (which results in more sore muscles) - so maybe I'll feel good enough on some days to cook.

Maybe I'll watch that old movie, "Mixed Nuts," although I don't even remember what it's about. At least I'll be distracted from pain for a bit, and maybe I could feel like I can be a happy nut.

("natural flavors")
