I ate GF delivery pizza! (& didn't get sick!)

This is my 100th post on this blog! Hooray!

For those of you who were wondering if I was alive, I am... I'm trying to get used to sleeping with a machine that puffs air up my nostrils. (Which has been taking away my sleep, which in turn makes me hurt more and be tired.) The hope is such that it will, eventually, improve my health. I shall explain more in another post.

Right now, I'm excited about having had pizza on Valentine's Day!

Having delivery pizza may not seem like the most romantic Valentine's date, but for us, it was the ultimate luxury... A few companies like Bob's Red Mill and Ener-G make gluten-free pizza crust mix/pre-made shells, but GF delivery pizzas are still few and far in between. I once went to pick up a GF + egg-free pizza at a restaurant near Kirkland, but the crust tasted like cardboard, and I felt crushed. :( (It also didn't help that I was bringing it to attend a gourmet pizza-baking party.)

Then recently, Daniel spotted this sign in our neighborhood: "Garlic Jim's Famous Gourmet Pizza: Gluten-Free Pizza now available!"

Still, I was cautiously optimistic, because things that say "gluten-free" could still have dairy or eggs in them. Usually eggs are the culprit.

So I wrote in to their website to inquire. To my delight, the GF crust they make is dairy- and egg-free! This was music to my ears.

They don't offer any vegan (i.e. dairy-free) cheese alternative, but the company rep told me the pizzas would still be good without cheese (with just the sauce).

So we took the plunge. We were so glad we did -- it was the best tasting gluten-free, egg-free crust we've tasted to date! AND we can get the pizzas delivered!

I used to be a bit of a pizza snob and didn't exactly jump to order delivery pizzas in the past, but two years of deprivation can do wonders...

Happy belated Valentine's Day!

Our first *very* gluten-free chai -

Weather: Cloudy; 63°F
Energy Level: 4 out of 10
Mood: Kind of in a haze with the continuing headache and sleep deprivation...

this. ↓

Sweet.

(I guess chai should be normally gluten-free by definition - so it's not something to be overly proud of, but since lots of chai mixes have mysterious natural flavors, I got to have fun with this.)

In case anyone is interested, here is the recipe I followed - I added coriander for the heck of it because I had some, but that wasn't in the original recipe (the recipe is kind of a mishmash of what I found on the Web and what Scully told me). I think I might add more ginger next time since we like ginger.

Ingredients
  • 1 T fennel seeds
  • 6 green cardamom pods
  • 12 whole cloves
  • 1 cinnamon stick
  • 1/2 inch ginger, peeled and thinly sliced (that's what it said, but I might skip peeling next time...)
  • 6 black peppercorns
  • 6 coriander seeds
  • 7 C water
  • 2 T loose black tea (you could probably add more depending on what you like; stay away from delicate ones like Darjeeling for this recipe since cinnamon and ginger would overwhelm it.)
  • 3 T honey (this doesn't result in super sweet tea like the ones you might get at Starbucks - the result is more mild with spicy kick. You could put 4 T brown sugar.)
  • 1 C almond milk (any milk)

Since I can't drink regular milk, I made it with unsweetened almond milk. Scully suggested that I might add saffron to make up for the fact my plant-based milk would not be as rich as regular milk. I've always believed the European conventional wisdom that saffron is expensive, but apparently it's quite reasonable if you go to one of the Indian/Pakistani stores in the area. Learn something new every day! Next time I think I'll go to one of those to stock saffron (and other spices).

  1. Grind up spices in a mortar and pestle. (Even better if you dry roast them in a pan beforehand.)
  2. Combine spices and water in a saucepan.
  3. Boil 5 minutes.
  4. Remove from heat and steep about 10 minutes.
  5. Add the tea and bring to a second boil.
  6. Reduce the heat and simmer for 5 minutes.
  7. Strain the mixture and return it to the saucepan.
  8. Add the honey and milk, stirring to dissolve.
  9. You got 8 lovely cups of chai!
Note: Some believe fennel should be added at the last minute, after the second boil. Since we're beginners and still experimenting (and it was late), we didn't discriminate.

I'm sure there are a lot of different ways to make this. I hear each Indian household usually have their own recipe. I'm open to suggestions/tips!

Yummy!

P.S. I think I'll take a break from the computer this weekend - too much typing during the week; now my hands and arms really hurt :P

P.P.S. On second try, we added a piece of star anise and a couple of strands of saffron - made the flavor round and sweet. Yummmm.

Gluten-free, dairy-free "ice cream"! -

Being a celiac who can't eat any wheat, dairy nor egg protein, I often feel like I've got three strikes against me in terms of desserts. I never had much of a sweet tooth to begin with, but being a chocoholic and loving the smell and taste of coffee, there are certain things I miss, like the divine chocolate soufflé at Canlis, or Ben & Jerry's classic Coffee Heath Bar Crunch, or Baskin-Robbins' Jamoca Almond Fudge, etc. Oh, and Daniel proposed me in the Italian gelato shop we frequented in Denver, so we obviously like gelati (that's plural of gelato for you - I didn't know that either). I think these things are associated with good memories and thus hold dear places in my heart. (OK, and they are good - except for Baskin-Robbins; that's a leftover from my early teen memories.)

When I write like this I sound like I ate desserts all the time, but I really didn't. Being a bleeding-heart liberal that I am, we're signed up with Working Assets for long distance calls, so we'd get free coupons for a pint of B&J every month since we moved, and we'd never redeem them. Once we did, our pint would sit in the freezer for months (partially because we are absent-minded and we'd forget it's there). Even when we ate out, getting a dessert was a rarity - maybe a couple of times a year.

But as human psychology goes, once I found out I couldn't have them, I had to obsess over them. As a person who tends to dive into things with gusto (and cool quickly), I tried almost all gluten-free cookies on the market (just when did I ever have cookies at home before?), re-visited soy and rice ice creams, and thought about just having sorbets. Not nearly as satisfying.

I was walking through Whole Foods the other day after my chiropractor appointment, just to pick up some necessities like almond milk (I think it's better than soy milk - I recommend unsweetened vanilla). And this guy behind the sample table says, "Would you like to try a new frozen dessert? It's gluten-free and vegan (thus dairy- and egg-free)." Whaaat? He got my attention in less than a second. I was like, "It sounds like it was made for someone like me!" So I tried a sample - Cherry Amaretto flavor (seasonal) - and it was delicious! With no hesitation I asked him, "Where can I find them?" So I went home with the Coffee flavor and Cherry Amaretto flavor. Yum.

Turns out this stuff is made with coconut milk. It's also sweetened with agave syrup, which has a much lower glycemic index (the rate at which you get the "sugar rush" and subsequent "crush") than sugar - for someone like me who seems sensitive to cane sugar, it's a godsend. And it's all organic. What's not to like???

For those of you who are not in Oregon/Washington area, sorry - right now the company, Luna & Larry's Bliss Unlimited (the product name is Coconut Bliss) seems to be still expanding from their Eugene, OR location. I got mine at Whole Foods (I haven't checked if they carry them at PCC - if they don't, I think I'll ask them if they could). Those of you who are in NW, you're in luck! I urge you to try it so they keep making these! I think it's also a tasty, healthier alternative to ice cream, vegan/dairy-challenged or not.
