Return of Aunt Flo - 還ってきたお月様。

I hesitated to write about this because there are male friends and family members who read my blog, but I figured they're all adults and they can handle it. Also if there are people out there in a similar situation as mine, they might appreciate they're not alone.

I'm not sure of the reason, but for quite a while I didn't get what I could call a "regular" period.

When I was a teenager, I cursed at the fact I was a girl and I had to deal with such a thing once a month. But when it goes away, it's kind of sad. Especially since I'm not at the age to expect to lose it yet, I kind of felt like I was half the woman.

My moon time wasn't completely gone -- it would show inkling of it, like a few rain drops. And it would stop. Then a few more rain drops. Like my body was trying to do it, but couldn't quite bring itself to produce the whole deal.

My body may have been under massive stress because of the celiac disease. I've heard, with undiagnosed celiac disease, many women experience infertility and repeated miscarriages; it would only make sense the effects spread to periods too. My progesterone level, taken last April right after I went on gluten-free diet, was less than that of post-menopausal women.

I took progesterone medication and used a cream, but for the past 10 months or so I've been on gluten-free diet, that still didn't quite do it. Perhaps my body didn't have enough resource.

Then, with the new year came a surprise -- a few days of regular moon time! Yay! I felt like I was beginning to become whole, again. Though it could be the new progesterone medication, maybe I'm beginning to absorb more nutrients!

With older researches, they used to think the atrophied villi (the little fingers in small intestine that absorb nutrition) from celiac disease should come back within months of beginning gluten-free diet. With newer researches, now they say while the most obvious symptoms (stomach cramps, etc.) usually go away within months, the atrophied villi would usually take up to 24 months to recover and some may not completely come back.

So it takes time.

Being gluten-free has become easier over time. Eating out while avoiding cross-contamination is still a challenge, but we feel like we see more and more gluten-free options available even at mainstream grocery stores. I feel quite lucky that I found out when I did, when there is abundant information about celiac disease and gluten-free diet both in print and on the Internet. I can't imagine what it would've been like if there was no Internet!

(Gluten-free diet seems to be even in vogue. I recently found out that a friend of mine went on it to be more health-conscious, not so much for medical reasons.)

I also find it lucky that I found out before I really tried to become pregnant. It could have been really stressful, without knowing the cause, if I had miscarriage after miscarriage (or not become pregnant at all). I do want children someday if I could, so it's good to learn what may be keeping me from being fully nourished. (Even if that doesn't happen, it's good for myself!)

The first real moon time in a long time kind of exhausted me, but it made me giddy and happy (so much so I called my mom in the middle of the night -- daytime in Japan).

I continue to have a slight cold (continuing since before Christmas) with my wimpy immune system, hence fewer blog posts lately, but I'm alive with moon time!

男性のお友達や家族も私のブログを読んでくださることがあるので、
お月様タイム(とシアトルのナチュラル志向タイプは呼ぶ)のことを
書くのは当初気がひけたのですが、みんな大人だし、
もし似たような状況の人が読んだら「私だけじゃないんだ~」と
思えるかなと思い、書くことにしました。

理由は定かではありませんが、長いあいだ、「普通の」
お月様タイムはありませんでした。

10代の頃は、女の子に生まれて1ヶ月に一回面倒だなあ、と
文句を言ったものです。 でもなくなってみるとなんだかさびしい。
まだなくなる歳でもないので、自分の一部が欠けたような気分でした。

私のお月様タイムは完全になくなった訳ではありませんでした。
1ヶ月に一回、訪ねてきたい意思のようなものは見受けられました。
一粒二粒降ってきて、「やっぱりやーめた」と止まってしまう雨みたい。
体としてはそうしたいのだけれど、舞台に出てきたものの、
「あ、やっぱりちょっと無理でした。お粗末さんでした~」と
ひっこんでしまう芸人みたいな感じ。

セリアック病のせいで栄養がうまく吸収できず、体にストレスが
溜まったのでしょう。 グルテンフリーの食生活を始める前の
セリアック病の女性は、不妊症や流産を繰り返すそうですから、
生理に影響するのもうなずけます。 昨年4月、グルテンフリーに
なった直後にプロゲステロン(黄体ホルモン)のレベルを検査した
ときは、更年期後の女性よりも低いレベル、と言われたので、
生理がヘンテコリンなのも納得しました。

薬でプロゲステロンを摂ってみたりしましたが、グルテンフリーに
なってからここ10ヶ月ほども、満月のお月様タイムは来ませんでした。
体にそれだけのことをする資源がなかったようです。

そして新年になって、まるでプレゼントのように、数日間お月様が
訪ねてきました。 イェイ! 新しいプロゲステロンのお薬のせいかも
知れませんが、体が栄養を少し能率的に吸収し始めたのでは?と
楽観的に考えています。

古い情報だと、セリアック病のせいで萎縮・死んでしまった小腸の絨毛
(栄養を吸収する小さい指のような組織)はグルテンフリーの食生活を
始めれば何ヶ月かでもとに戻る、というようなことでしたが、
もっと最近のリサーチによると、一番明らかな症状(腹痛など)は
数ヶ月で著しく減るものの、腸絨毛は24ヶ月くらいまでかかるか、
または完全には戻らない、ということです。

長期戦、ということですね。

グルテンフリーの生活をするのもかなり慣れてきました。

外食するときなどにグルテンの交差汚染(なにかを切った包丁で
私の食べるものを切るとか)を防ぐのは未だ難しいことですが、
普通のグロサリーストアなどでも、「グルテンフリー」のオプションが
どんどん増えてきている感があります。 活字でもインターネットでも
グルテンフリーの情報がたくさんある、いまの時代に診断された
私は、本当にラッキーだと思います。 インターネットがなかったら
どうしていたか、想像もつきません!

(それに、グルテンフリーのダイエットはひそかに流行している
みたいです。 友人で、糖尿病ではあるものの病気には関係なく、
健康のためにとグルテンフリーのダイエットを始めた人もいます。)

それに幸運だったと思うのは、子供を作ろう!とか頑張るまえに
診断されたこと。 もしそうでなくって、原因も知らずになぜか
流産を繰り返したり不妊症だったら、すごいストレスになっていた
ことでしょう。 将来、できるかはわからないけれど、できたら
子供が欲しいなあと思うので、栄養吸収の妨げになっている
要因をいま発見しておくことはいいことだったと思います。
(子供はできなくても、将来の自分のためにも!)

久しぶりのお月様タイムは疲れましたが、なんだか変だけれど
ドキドキワクワクして嬉しくなってしまいました。 
(日本では日中だったものの、思わず夜中に母に電話してしまいました。)

免疫不全のせいか、クリスマス前からの風邪が治らなくて
ブログの更新も休んでしまいましたが、お月様タイムが来るほど
生きていますのでご心配なく!

Re: Gluten-free cosmetics (additional info) - グルテンフリーのコスメについて、新たな情報

It took a few days, but I just heard back from Clinique about their lipstuffs (I just made that word). So their formulations (in regards to gluten) are not shade specific.

Here's their reply (I made the relevant part red):

While a formulation may contain no wheat, oat, barley or rye derivatives, for the benefit of our gluten-sensitive consumers who may have cross-sensitivities, Clinique takes the extra precaution of including corn, rice and soy in our research.

A vast number of raw materials from many different suppliers and sources are used in the manufacture of Estee Lauder Companies' products. It is therefore not possible for us to fully guarantee that our products are completely free of ingredients that may elicit an allergic response in highly sensitive individuals who react to gluten. For example, it is possible that small amounts of a wheat sourced ingredient may remain on shared manufacturing equipment even after a thorough cleaning. We therefore recommend that you discuss this with your physician, because consumer safety is of utmost concern to us.

With regard to your inquiry, gluten is not shade specific. Colour Surge Lipstick contains corn and soy. Superbalm Tinted Lip Treatment contains barley extract and wheat germ extract. Full Potential Lips Plump and Shine contains soy. Almost Lipstick does not contain gluten.

Hmm. It sounds good, but they're basically saying, "We try to be careful, but look, we're a big company with lots of subcontractors - so whether you want to take a risk with cross contamination is up to you." I do like their Almost Lipstick line... tempting, but Daniel would probably tell me to err on the safe side.

On the other hand, Kiss My Face brand says in their FAQ section:

Very nice! I like this company. (But I just found out one of the shampoos I use is in this list. Oops.)

All in all, it seems that I just have to research some and decide if I trust a product/company, just as I would with food (except the labeling standards are not the same, since cosmetics don't need to list up common allergens). Looks like Kiss My Face earned themselves a trusting customer :-)

Unlike severe peanuts allergy, I'm not going to die from it right then and there. (Obviously, seeing how I used to eat regular bread. Bread! Made from wheat flour! Wow, how I was wringing my own neck.) The effects are invisible, because it has to do with the damage on the inside of small intestine - so it is possible to be not strict about it. Seeing that celiac disease has probably knocked me out as a warning, though, keeping my (conventional) makeup for hours of vanity is probably not worth it.

It's like I've got an extra heart in a video game of life (by having met good doctors and solving a celiac disease puzzle!) - and I'm not going to waste it.

なるほど。丁寧な回答ではありますが、要するに、
「うちは大きい会社なので原料も出所がいろいろで、様々なところに
委託しているので、調べはしましたがコンタミのリスクを負うか
どうかは自分で決めてくださいね」ということですね。
オールモスト リップスティックは好きなんだけど信用できるか・・・
惹かれますが、多分ダニエルは安全な道をとろう、と言うでしょうね。

一方、キス マイ フェース(オーガニックの化粧品会社)は、
ウェブサイトの「よくある質問」セクションでこう書いています。===================================================
Q: 製品にグルテンは含まれていますか。

A: いいえ、殆どの製品がグルテンフリーです。

これはいいですね! いい答えです。 一気にお気に入り。
(でもうちにあるシャンプーの一つがこの中に含まれていました。)

結論としては、食べ物と一緒で、ちょっと掘り下げて購入する前に
リサーチして、製品・またその会社を信用できるか自分で決める
必要があるということですね。 (ただ、食べ物と違い化粧品の
場合は、ラベルによくあるアレルギー源が入っているか表示する
義務がありません。)

キス マイ フェースは信用できそうです (^-^)

極度のピーナッツアレルギーなどとは違って、発作を起こしたり
すぐ死んでしまうことはありません。
(前はパンを食べていたぐらいですから・・・。 
小麦粉で作ったパン! まさに、自らの首を絞めるとは
こういうことですね。)

効果は見えないところで、小腸の内壁が破壊されることですから、
あまり厳密にしないで過ごすことはできなくもありませんが、
折角セリアック病が「おーいこのままじゃいかん!」と警告を出して
くれたのですから、ちょっとした数時間の見た目のためにリスクを
負うのは馬鹿らしいことです。

人生がビデオゲームだとしたら、弱りきった時にいいお医者さんに出会って、
一つセリアック病の謎が解けて、健康ハートを一つ余計にもらったような
ものなので、無駄にしたらきっとばちが当たりますよね。

Um, can you say that in the earthling language? - それって地球語では何て言うの~?

Health: Eek. Alive. I always vow not to overdo it on weekends, but I end up recovering from weekends during the week...

I've been trying to clean out my cosmetics drawer, so not to negate all my other treatments. This is hard.

I'm a sucker for cutely-packaged cosmetics. I think this addiction was exacerbated by the fact my late aunt used to lure me with department store gift certificates (a certified shopaholic, she had a "savings" account with department stores, which resulted in store merchandise certificates at the end of a term = more shopping) in my youth. Unable to afford
über-overpriced shoes or clothing in a Japanese department store with these store notes, I usually stocked up on shiny cosmetics.

Having moved to a short walking distance away from a Sephora store (for those of you who don't know, it's like FAO Schwartz of cosmetics) and a drugstore, I've racked up a healthy collection of lip stuff. I don't wear much makeup usually, but some of them make me feel happy just looking at them and playing with them once in a while. The cosmetics drawer was like my toy box.

Until now. Now it contains potential poison.

My super nice parents(-in-law) in Maine sent me this definitive book on celiac disease, written by the director of Celiac Disease Center at Columbia University and a science writer who has celiac disease. I've been reading bits of it when I'm not dizzy, and in it they talk about cosmetics.

The book says I can't have any lip stuff with gluten in it, because you ingest much of lipstick/lip balm/lip gloss. Makes sense now that they mention it - if less than 250 mg of gluten can set me back, this could be bad. (There seem to be conflicting opinions about skincare products, body shampoo, etc., depending on whom you ask in which country - for now I'm avoiding obviously wheat-y, barley-y, oat-y personal care products.)

Hmm.

I've obviously thrown out most of the packaging of what I'd bought in the past. Am I going to spend hours on the phone with each cosmetics company? It hardly seems worth it. But some of them are my favorite colors!

I've written to a couple of companies, one of which is
M•A•C Cosmetics. Apparently, even if something is in a same product line, each color has different formulation. So I need to ask about each color.

You typically get a response like this (no, they didn't highlight the wheat part red) - FYI, "Lip Conditioner" is just a fancy lip balm:

Who knew a lip balm could contain so many things? (And what the heck is
ASTROCARYUM MURUMURU BUTTER anyway?) This makes you appreciate that ice cream commercial they used to have, where the kids are trying to pronounce ingredients in one of the ice creams and the other one is made from milk, sugar, etc.

During these exchanges, I learned:
triticum vulgare (wheat) germ oil/extract = bad
hordeum vulgare (barley) extract = bad

Then I came across a list of suspect grain-containing cosmetics ingredients on one of the forums at Celiac.com (this was included in a response to someone else from Garnier, and as you can see, it doesn't include
hordeum vulgare - so it's not a complete list):

For those of you who might be curious:
  • M.A.C. SlimShine Lipstick in color Elegant contains hordeum vulgare (barley) extract, triticum vulgare (wheat) germ extract and soybean extract = REALLY BAD
  • M.A.C. SlimShine Lipstick in color Bare contains ascorbyl palmitate (corn) and caprylic/capric triglyceride (soy) = Seems OK
  • M.A.C. PlushGlass in color Nice Buzz does not contain gluten (yay)
  • M.A.C. CremeStick Liner in colors Creme O' Spice, Gengerroot, & Sublime Culture, do not contain gluten (yay)
Although, as I called other companies, they basically told me they can't guarantee anything to be gluten-free unless it specifically says so. (Perhaps there might be cross contamination/possible change in product formulas?)

Maybe I'll stick to a plain beeswax lip balm and this Bare lipstick for a while. Apparently the more "long-lasting formula" a lipstick is, the more likely it would be to contain wheat (or barley). So Gwynn, who also can't eat gluten, was telling me when you get the organic/all natural stuff with no gluten, it lasts for about 1 hour (tops) and it seems to be gone from your lips. (Goes to show how much of the stuff you ingest.)

So maybe I won't be a red-lipped siren. Oh well. Whenever I put on makeup I looked like a kid playing with mom's makeup most of the time anyway; so maybe this is another blessing in disguise, to simplify my life...

体調: うーん・・・生きてる。 毎回、「週末に活動しすぎないようにしようっと」と
思うのですが上手くいきません。 毎週、週末のツケをウイークデーに払ってます。

他の治療を無駄にしないよう、化粧品を整理しようとしています。
なかなか進みません。

かわいいコスメにとことん弱い私。
もともと弱いところに、亡くなったおばがデパートのお買い物クラブで
積み立てて増えた分の商品券をくれることが多かった若い頃。
お洋服や靴を買える金額でもなかったので、
(堅実に下着とか靴下でも買えば良かったのでしょうが・・・)
ワクワクして、綺麗なケースに入ってくる化粧品を
買いためたものです。
(カラスと同じでキラキラしてるものに弱いのかも)

化粧品のデパートのようなセフォラのお店と、ドラッグストアから
歩いて5分のところに引っ越したことも助けて、
リップグロスやリップクリーム、口紅など、ずいぶんあります。
そんなに頻繁にお化粧をする訳でもないのですが、
コスメの入った引き出しはおもちゃ箱か絵の具のようなもので、
つけてみたり、開けてみたりするだけで楽しいんですよねー。

と、それは今までの話。 実はその中に私には毒となるものが
入っていたのでした。

最近、メーン州に住むとても優しい義父母が、
コロンビア大学のセリアック病センターの所長と、
自身がセリアック病持ちの科学ジャーナリストの女性とで
共著したとても詳しい本を送ってくれました。

めまいがひどくない時に少しずつ読んでいるのですが、
その中で、著者は化粧品について少し書いています。

その本によると、グルテンの入ったリップクリーム、リップグロス、
口紅は厳禁。 というのは、口につけるものは大部分が
消化器官に入ってしまうから。
(250ミリグラム以下のグルテンでも症状が戻ってしまう、と
言うのですから、そう言われてみれば当然ですね。)

肌から吸収される他の化粧品や医薬部外品(ファンデーションとか
ボディーシャンプーとか)については意見が分かれるようで、
この本には書いてないのですが、南半球(オーストラリア)や
イギリスの本には避けたほうが無難、と書いてあります。
今のところ明らかに麦類の入ったものは避けていますが。

うーん。

以前買ったものについては箱や説明書は殆ど捨てて
しまっています。 あるものあるもの全てについてあちこちの
化粧品会社に電話したりするとなると、かなり時間がかかりそうで
気が遠くなりますねー。
でも、中にはお気に入りもあるし・・・。

てな訳で(どういう訳なんだか)
M・A・C など、いくつかの化粧品会社に
問い合わせてみました。 面倒なことに、例え同じ商品でも、
色によって原料が違うので、1色ごとに問い合わせなければならないそう。

リップクリームって複雑なのですねー。
生物学、化学と、植物学に通じてれば全部分かるかも。
(でも一体、
ASTROCARYUM MURUMURU BUTTERって
なんやねん?)

昔、二人の子供と二種類のアイスクリームを並べて、
一人の子はその内の一つのアイスの原料リストを読もうとするのですが
発音できなくて、もう一人の子と別のアイスクリームの方は
「ぎゅうにゅう、さとう、・・・」と読んでいくコマーシャルがありましたが、
それを彷彿させる内容です。


こういった問い合わせを繰り返して、少なくとも次のことが分かりました。
triticum (コムギ属) vulgare (植物学で胚芽という意味のようだ)
germ oil/extract = 小麦胚芽油または
抽出物=ダメ
hordeum vulgare extract = 大麦胚芽(?)抽出物=ダメ

そんなことを調べている内に、 Celiac.com の掲示板の一つに、
化粧品の成分に入っていると良くない原料のリストがありました。
これは他の人の問い合わせに対する回答として
Garnier から返ってきたものですが、見て判るとおり
hordeum vulgare extract (上記参照)は入ってませんし、
完全なリストではありません。

いくつか、M.A.C.の製品について興味のある方用:
  • M.A.C. スリムシャイン リップスティック エレガント(色名)は
    大麦胚芽抽出物小麦胚芽抽出物が入っているので絶対ダメ
  • M.A.C. スリムシャイン リップスティック ベア(色名)には
    明らかに悪いものは入っていません。 コーンと大豆が主成分。

  • M.A.C. プラッシュガラス ナイス バズ(色名)にはグルテンは
    入っていません。
  • M.A.C. クリームスティック ライナー  クリーム オー スパイス、
    サブライム カルチャー にはグルテンは入っていません。
ただ、いつも言われるのは、「グルテンフリー」と特に書いていない限り、
保障はできません!ということ。 工場で他のグルテンの入った原料と
生産ラインを共にしたり、成分が変わるからでしょうか。

蜜ろう(ビーズワックス)が主成分の単純なリップクリームと、
これは大丈夫、という口紅だけで過ごすのが賢明ということですね。
大抵、「つきが長持ち」と書いてある口紅には小麦・大麦胚芽関連の
成分が入っていることが多いそうです。
セリアック病ではありませんがグルテンの食べられないお友達の
グウェンさんによると、グルテンの入っていなさそうな口紅は
だいたい一時間足らずでぜーんぶ口から取れてしまっているそうです。 
(それだけ口・消化器官にに入っていってるってことですね。)

という訳で、赤いセクシーな口はあんまり向いてないようです。
まあ、お化粧するとなんだか子供がお祭りにお化粧してるみたい、と
思わないこともなかったので、生活をもっとシンプルに、という
おぼしめしでしょうか。

P.S. アメリカで売ってる Softlips (メンソレータムが昔日本で売ってた、
スリムタイプの薬用リップクリームですね。 日本にはもうないみたい)は
全品グルテンフリーと会社のサイトに書いてあります。 
特にお気に入りではないけれど、良かった。

P.P.S. (将来の自分か、他の誰でも興味がある人にメモ) グルテンフリーの

Making guaranteed GF pickled ginger (gari) - 絶対グルテンフリーのガリを作る。

Why someone on GF (gluten-free) diet must watch out for pickled ginger at sushi restaurants (esp. outside Japan)

Pickled ginger (gari) that comes with sushi can be a tricky thing for those wishing to avoid gluten or MSG.

Why? Because most sushi/Japanese restaurants in the U.S. buy it wholesale, and as with most prepared, pre-packaged foods, it's loaded with food coloring, preservatives and flavoring. As I mentioned in my previous post, the "amino acids" flavoring in particular - which is almost always included in Japanese pre-packaged foods marketed in the U.S. - can be a variety of things, most notably glutamic acid or glutamate (also one of the two main components of MSG). If manufactured in the U.S., glutamic acid is likely to be GF (gluten-free), and it's included in the Celiac.com's safe food list. However, in other countries that's not always the case. Particularly in Asia (Japan, China, etc. - where they manufacture these packaged foods), quite a few food manufacturers make glutamic acid out of wheat (apparent from my Japanese language sleuthing on the Web; I'm assuming it's a cheaper ingredient/process). Then, as I mentioned before, it's labeled simply as "amino acids."

Hence, the ginger/gari's safety cannot possibly be determined by asking a restaurant employee. They would say, "um, I don't think it has any wheat," because the bag would only say "amino acids," and they don't know what that means. It would probably be safe if it's made domestically (no guarantee), but what if they buy imported packaged ginger made in China or Japan? Checking would involve contacting the manufacturer overseas, and then their supplier(s) of these components - which of course change all the time dependent on pricing.

I cannot really blame these restaurants. I must mention that the restaurant I used to work at ages ago, Matsuhisa, made their own gari (so do a lot of better sushi places in Japan), but it's not exactly fair to compare Nobu's multi-million dollar restaurants in LA (or NY or Milan or London...), with lots of sous chefs, with a neighborhood sushi restaurant in Seattle. After all, consumers and business leaders allowed such practices (by that I mean sketchy food manufacturing practices with fake flavors) to dominate the market.

So, if you are a celiac glutton like me who love sushi and also love pickled ginger, the only safe thing to do is to make your own. Thankfully, it's not all that hard. The hardest part might be getting the right type of ginger.

Hunting for "young ginger"

Japanese cooking is highly determinate by seasons. As such, the time you want to pickle ginger is what they refer to as "early summer" (May) to summer. This is because you want to get your hands on "young ginger" (or shin shouga) if you can. I'm embarrassed to admit that I'd never tried to do this before being diagnosed as a celiac, so I had no idea whether I could get my hands on young ginger in the U.S. I say this because the ginger you see in American grocery stores are so sad looking - old, dry, wrinkled, sometimes moldy, fibrous, and generally just sad. I needed plump, young ginger for this project. (I tried pickling ginger before with old ginger roots, and the result was yucky.) So I thought I would aim at Asian grocery stores, where the fresh ginger supply's turnaround is quicker.

So as I went to get my car's emission tested up north last week, I stopped at Shoreline Central Market, which I knew was at least partially run by a Japanese American family. And there they were! Young ginger! I was so happy. They seemed a little larger and more rugged than ones found in Japan, but the fact they had them was great. (I wouldn't be surprised if Uwajimaya or 99 Ranch Market had some as well.) I must also admit that since I was feeling so beaten up I didn't get started until a week later, so the ginger roots shrunk some from their original glory.

These young roots have a much higher water content, are much less like eating strings, and are much sweeter! You can bite into them and not really wince. Also important are the purplish pink tips. This is what's supposed to give pickled ginger the slight pink color - except, in packaged ones they almost always add coloring. Home made ones should be mostly yellow/brown-ish with a tint of pink, if the ginger root has these pink tips.

Blah blah blah - so how do you make it?

~The Recipe~
(This recipe was adapted from Japan's AllAbout.co.jp guide/food writer, Yukako Yamazaki.)

Ingredients:
(A thing to remember here is that every household has their own recipe - so it's not an exact science. For example, Matsuhisa used some garlic in theirs to balance the South American elements in their cuisine. So you can use a little more or less of anything here.)
  • Young ginger - 500 g (a little more than a pound)
  • Rice vinegar - 400 cc (about 14 oz, or 1 3/4 cups)
  • Light brown sugar - 150g (about 5 oz)
  • Mirin (sweet rice wine) - 100 cc (about 3.5 oz or 7 Tbsp)
  • Water - 120 cc (about 1/2 C)
  • Salt - 1 tsp (I recommend sea salt. Better for you.)
Method:

1. Peel the skin off ginger - if young, you can scrape the roots with the back of your knife and get most of it off, which is all you need.

2. Slice them as thin as possible according to the direction of fiber. My trusty Benriner worked great - you can get one of these cheap at Asian stores, if you don't care about owning the shiniest mandoline from Williams-Sonoma to show off.

3. Soak the sliced ginger roots in water to take off sharpness/bitterness for more than 30 minutes. I soaked for an hour because the ginger roots were getting old and sharper. Apparently you can even soak overnight if you really like them mild.

I think I ruined the coloring because I only had
brown sugar, which made the whole thing brown.

4. Take the sliced ginger roots out of the water and blanch them (just place them in boiling water for no more than 5-10 seconds) - except you don't need to put them in cold water afterward. You want to cool them off slowly. Take them out onto a strainer - the bigger the surface area the better, as you want to spread them out - and sprinkle them with sea salt. Once most of the heat is cooled to the touch, squeeze out the water.

I don't have one, but if you can get
your hands on bamboo or plastic zaru,
that would be best.

5. In a saucepan, mix rice vinegar, light brown sugar, mirin, and water. Bring to a boil and cook till all the sugar is dissolved. In a glass jar or a container which can withstand acidity, place the ginger root slices, and pour the hot vinegar mixture (amasu) on top. Cover and let it cool on counter top until cool enough to put in a fridge. Once cool, chill in the fridge.


Voila! You got your own positively GF gari! You can start eating it after chilling it overnight, and it gets better over time. The best thing is it doesn't taste like corn syrup and you're not eating food coloring or preservatives or MSG. It also tastes much better. Yay! It's yummy.

先ほどは泣き言を言ってすみません。

GF(グルテンフリー)の食生活をしている人が
既成のすし生姜(ガリ)に気をつけなければいけない訳
(日本のいいおすし屋さんなら大丈夫でしょう)

グルテンやMSG(化学・アミノ酸系調味料)を摂らないよう
気を付けている方は、お寿司についてくる生姜(ガリ)にも
気をつける必要があります。
(これはアメリカや他の国でのお話で、日本のいいお寿司屋さんは
大丈夫かと思いますが。)

なぜかと言うと、アメリカの大抵のお寿司屋さんや日本料理店は
卸業者から袋に入った出来合いの生姜を買うからです。
これには他の保存食と同様、着色料、保存料、そして「調味料」が
入っています。

前の書き込みで言及しましたが、調味料と書いてあるときは
大抵アミノ酸調味料のことで、海外で売っている日本食品の
ほとんどはこのアミノ酸調味料が入っているようです。
アミノ酸にはもちろん色々種類があるわけですけれども、
一番多いのは「うまみ調味料」と言われる、MSGの主原料の
一つであるグルタミン酸でしょう。

アメリカ国内で生産されているグルタミン酸はGF(グルテンフリー)の
ものが殆どのようですが(ですからアメリカ現地産なら保証はできませんが
おそらく大丈夫)、日本食品の多くは日本や中国から輸入している
ものです。 日本語で少し調べてみると、日本や中国の食品原料業者で、
小麦を主原料にしてグルタミン酸を生産している会社がけっこうありました。
そして食品に入る段階では「グルタミン酸」とさえ書かず、
「アミノ酸」か「調味料」と書いてあるものが殆どです。

ですから例えレストランの従業員にガリの原材料を聞いてみたとしても、
彼らは「アミノ酸」や「調味料」が何で出来ているかなんて
知ったこっちゃありませんから、グルテンが入っているかどうか
知るのは不可能になります。
(その卸売り業者から食品加工業者に原料製造業者は誰、
と聞いて日本や中国に電話するわけにもいきませんし、
原料の仕入先なんてそのときの値段でどんどん変わるでしょう。)

と言って、レストランを責める訳にもいきません。
私が大昔働いていた松久レストランでは無論自前のガリを
作っていましたが、シアトルのご近所のお寿司屋さんと、
年商億単位の、板前さんがいっぱいいるお店を比べるのは
不公平というものです。

それに、こういういろいろ添加物が入った保存食中心の
食文化を許したのは消費者と、その動きに敏感な食品産業の
リーダー、そして自分達で作った「合理主義」文化ですから。
(でも大抵体に悪いものが合理的、と言えるだろうか。)

てな訳で、私のようなセリアック病の食いしん坊さんで、
お寿司もガリも好きな人は、自分で作るしか安全な道は
ありません。
幸いなことに、生姜の甘酢漬けを作ること自体はそんなに
難しくありません。 アメリカにいて一番大変なのは、
材料の新しょうがを探すことでしょう。

こんなのあったらいいんですが・・・。

お恥ずかしい話、セリアック病と診断されるまで新しょうがの甘酢漬けを
作ってみようとか思ったことがなかったので、探したこともありませんでした。
(反省。) 初夏から夏にかけて出回るものだと思いますが、
アメリカのスーパーでは見たことがありませんでした。

こちらのお店で買えるしょうがと言えば、なんだかショボショボ
乾いてしまって、茶色い、ともすればカビが生えている、
中身が固い繊維だけになったものしか見ません。
そんな悲しいしょうがで一回甘酢漬けを作ってみましたが、
苦くて辛くて固くて。 ですから出来ればこれには、水気の多い
新しょうががあるといいですねー。

そこで(安直だけど)考えたのは、もっと品物の回転の速い、
アジア系スーパーに行くこと。 ダウンタウンの宇和島屋まで
出かける気力も体力もなかったので、ちょうど先週、車の
排気ガス点検に出かけた際、その近くのセントラルマーケット
立ち寄ってみました。 (ここも日系人が始めたスーパーなので
アジア系のものが充実してますね。)
多分、中国系の99ランチマーケットにもあるのでは?

ありましたありました! ちょっと先週はバテていたので
写真を撮るのも甘酢漬けを作るのも遅れてしまいましたが。

大きくてたくましい感じ。

やはり普通にあるしょうがと比べるとみずみずしくて、そのままでも
結構食べられます。 うれしーい。
このピンク色の先っちょが甘酢漬けのピンク色になるのですね。
(家に黒糖しかなかったので、自分で作った際はなんだか茶色に
なってしまいましたが・・・。)
でも思い起こすと、松久の自家製のガリもだいたい黄色っぽい色でした。
普通に出てくるものの色が不自然なのですね。

そちらをご覧下さい。 (疲れた。)
それに、日本語で読んでいる皆さんに作り方、なんて
おこがましいですもんね。 私以外の人は結構、毎年
作っているのかも知れないし・・・。

唯一、アメリカ(か他の外国)に住んでいる皆さん向けに
補足することとしては、海外で売っているしょうがは日本と比べると
回転が遅く鮮度が落ちるので、水にさらす時間を増やしたら
味に丸みが少し増すのでは?という点です。
私は1時間ちょっとさらしてみましたが、もう少し
長くしても良かったかも。 一晩さらす、というレシピもありました。

これで絶対グルテンフリーのガリが出来上がり。
食べても具合が悪くならない、という安心感があるのは
いいものですね。

I'm a lucky, lucky girl with a very nice husband. Currently this girl is learning to pace herself.

I woke up feeling like someone beat me up with a stick during the night (I don't think Daniel did that - I didn't find a stick anywhere) and I'd completed a triathlon without properly training for it. (Normally I wake up feeling like I'd completed a marathon without completely training for it, which I have done in real life. I've never completed a triathlon, but you get the gist -I'm assuming it hurts more than a marathon.)

With a very painful throat, I looked in there to see if I'd gotten a strep or something. While I didn't see white spots in the back of the throat, there were little red spots like bug bites everywhere. Eek.

This may be due to the fact I sat out in the open to count traffic for Cascade Bicycle Club yesterday for a couple of hours. They are advocating for the original Seattle Bicycle Master Plan, some of which could crumble under some pressure from a minority of local businesses in Fremont, by providing the city with a more current and accurate traffic count/traffic makeup (what % is industrial trucks, passenger cars, bicycles, pedestrians, etc.). So they needed volunteers to count the rush hour traffic.

I'd been dying for a chance to volunteer to contribute to the community in some way, because while I've been sick, I felt like I was not contributing to the society.

The condition probably could not have been much better. It was a pleasant sunny weather in the 70s yesterday, but in the last 30 minutes of the rush hour, the street corner I was sitting on turned into a complete shade and I got chilled.

I've been trying to get over a chronic Epstein-Barr virus (mono virus) infection for the last 5-6 months or so - maybe I wasn't ready to be out in the open that long. Crap.

I stumbled back home, totally cold and dizzy from following numerous cars on the road with my eyes. (I didn't think it would be all that bad, sitting there and counting traffic, but holding up the clipboard and counting hundreds of cars zipping through the intersection were not easy for the current version of me.) Now, although it's 75 degrees in our place, I'm in the long warm alpaca wool sweater Daniel got me from Peru, complete with L.L. Bean slipper socks. Oh well.

So this morning I called a nurse, who recommended a wait-and-see approach for now, with warm salt water gargling and soft diet (chicken broth, warm apple juice, etc.) for the day. Upon hearing this Daniel jumped to the occasion, ran (or walked) to the nearby store and brought me back organic chicken stock and Martinelli's cider - all before going to work!

(Now as I write this, I'm finding myself a little annoying... sorry Daniel.)

Martinelli's juice holds a special place in my heart, because my mom used to buy the little 10 oz. round bottle (which was completely overpriced and totally expensive, being an import, and dollar used to be much more expensive against yen) when we were younger, and my brother and I used to share one. It was sweet like no apple juice in Japan (they tend to make Japanese apple juices with more tang - different species of apple - which I now like). It was like drinking honey, and when we had one it was a big treat. (I now dilute it with water, because it's almost too sweet as is!)

Bonus: Martinelli's web site's FAQ section states that "all of the products that Martinelli's manufactures are gluten-free." Yeah!

Wow, now I have a giant bottle of Martinelli's. I have such a nice husband. :-)))

(水曜日には疲れてたのと、地域のことに関する考えだったこともあり

私は優しいだんな様がいて幸せ者です。。。

自分の現在のペースがどんなもの(であるべき)なのか学び中。

今日起きたところ、寝てる間に袋叩きにされたか、
(バットも見あたらないし、されなかったと思う)
ちゃんと筋トレせずにトライアスロンでもしてみたような
痛みでした~。

(ちゃんとトレーニングせずにマラソンを走ってみたことは
あるものの、トライアスロンをしたことはありません。
普段は筋トレせずにマラソンでもしたような感じなのが、
もう一段階ひどかった、ということ。)

で、あまりに喉が痛かったので、ちょっと口の奥をのぞいてみました。
連鎖球菌性咽頭炎のときのように白い斑点はなかったものの、
虫刺されみたいに赤い点々が奥にいっぱい。 いや~ん。

昨日外に座って2時間ほど交通量の調査を手伝ったせいかも
知れません。 シアトルでは自転車、歩行者がもっと安全に移動しやすく
なるよう都市計画を立てていたのですが、少数の反対意見のおかげで
計画の一部がチャラになりそうなので、地元の自転車クラブ、
カスケード・バイシクル・クラブが中心となって
正確な交通量を把握して元の計画を支持しようとしているのです。
そこで、ラッシュアワーに商用トラック、乗用車、自転車、歩行者の
交通量を数えるボランティアを募集していたのでした。

(シアトル近辺に住んでいる方で、車の渋滞を減らして
交通手段を増やすのに安全な地域にしたいと思われる方がいらしたら
ここから市長にメールして下さい!)

のほほ~んと病気しているだけでいると全然社会貢献をしてないようで
焦ってしまい、地域の為に何かボランティアした~いとずっと
思っていたので、2時間だけということで飛びついたのでした。

多分気候などはこの上ない状態だったと思います。
寒くもなく暑くもない、風もあまりない晴れの日でした。
でもラッシュアワーの最後の30分、座っていた角が
日陰になって冷えてしまったようです。

ここ5~6ヶ月、EBウイルス(単核症のウイルス)の慢性感染症から
抜け出そうとしているのですが、ちょっと気分が良くなったので
油断しました。 外に2時間座るのはまだ時期尚早だったかも。

座って交通量を調査するだけならそんなに悪くないよね、と思って
参加したのですが、ラッシュアワーの車が何百とびゅんびゅん過ぎるのを
目で追って数えて、終わったときには目まいクラクラで寒気が満開、
クリップボードを持った腕はじんじん痛くなってしまいました。
家の中は今24度くらいですが、ダニエルがペルーで買ってきてくれた
あったかいアルパカのセーターと、LLビーンの毛糸の靴下スリッパ
着こんでこれを書いています。 反省。

という訳で今朝看護婦さんとお話したところ、暖かい塩水でうがいをしつつ、
チキンスープや暖かくしたりんごジュースなどを飲んで固形物は食べず、
しばらく様子を見ましょう、ということでした。
これを聞いて、すぐ行動に出たダニエル。
近所の店に駆けつけ(歩いて)、仕事に出る前に、
チキンスープとマーティネリのジュースを買ってきてくれました!

(私って迷惑なやつ、とちょっと自己嫌悪。 ダニエルごめんね。)

その昔、(歳がばれますね)ドルがまだ規制されていてとんでもなく
高かった頃、輸入品ということで日本のジュースより何倍も高かった、
丸いかわいい瓶に入ったマーティネリのジュースを時たま母に
三浦屋で買ってもらって、兄と半分ずつ分けたものです。
蜂蜜のように甘いそのジュースは私達にはご馳走でした。
(無論こっちではもっと安い。 今は甘すぎて水で薄めています。
年を追うにつれ日本の甘酸っぱいりんごジュースも好きになりました。)
その思い出があって、マーティネリは今でも大好きです。

それに、マーティネリのホームページ、「良くある質問」の中で、
「マーティネリの製品は全てグルテンフリーです」と書いてあります
やったー。

という訳で、大きなマーティネリのジュースがある今日。
優しいだんな様がいてくれて良かった。 (^_^)

The joy of being sick = beauty of raspberries! - 病気によって見つける喜び=ラズベリーって綺麗!

Energy Level: 3 out of 10
Mood: Pretty good but dizzy still...

I never realized raspberries were so beautiful.

(Forgive me I'm not a good photographer like my sister Nire... My picture doesn't really do justice to these raspberries!)

I've been thinking that there are certain upsides and downsides to being sick and in pain all the time.

For example:
Downside: We had to postpone our honeymoon trip to Japan/Japanese wedding.
Upside: Both of my parents are coming to visit us in Seattle next month! Yippie!

Downside: Since my feet hurt, I can't wear cute shoes with heels, which also disguise my short legs.
Upside(?): (Daniel may dispute this.) It's an excuse to buy cute flats to replace them.

Downside: Often too dizzy or too painful to drive for more than 15 minutes. (= Can't make it to Nordstrom Anniversary Sale.)
Upside: When I walk or bike, I notice things like dragonflies and birds catching bugs, and I get to rescue snails in the middle of a road.

Downside: Can't eat out as much due to the fear of poisoning myself with gluten/allergens.
Upside: We get to learn how to cook together and eat at home.

A lot of things I come across nowadays are quite surprising and delightful. Today's discovery started out like this:

(Last night)
Me: "I want one of those things that lets us make our own popsicles, because it's tricky to eat store-bought kinds."
Daniel: "Okay."
Me: "Wonder if they have it at Cook's World." (The kitchenware shop across the street where we are taking cooking classes - they give us a discount when you're their student.)
Daniel: "We can go look. It'll probably taste better anyway - we had one of those growing up."

Then we went and found one. An old-fashioned "Frozen Ice Pop Maker."

I was too tired to get started last night, so I started making our frozen pops today. I was at first going to make simple ones, some with pineapple/coconut juice and some with boysenberry nectar. Then I remembered the organic raspberries in the frig.

I washed them and started gently pulling them apart by hand to make them into smaller bits (so I can put them in the boysenberry pops) - I always knew they were beautiful fruits, but I never realized how beautiful each tiny berry bits were! (Do you call them seeds? Berries? Kernels??)

Evocative of pomegranate (looks a bit like corn too), each bit was slightly translucent, with glowing yellow-ish color inside. Amazing. The beauty was literally breathtaking.

If I hadn't found out about my celiac disease, I probably would've never stopped to look at each small bit inside raspberries.

This, and the rain, are keeping me happy today. Not to mention waiting for our own frozen pops.

今まで、ラズベリーがこんなに綺麗なものだったなんて気付きませんでした。

病気でいつも体が痛いと、いいことと悪いことがあります。

例えば・・・
悪いこと : ハネムーン・日本での結婚式を延期せざるを得なかった。
いいこと : 来月、両親がそろってシアトルに会いに来てくれる!
(お父さんお母さんありがとう!)

悪いこと : 足が痛くて、(足が短いのをごまかすのにも役立つ)
かわいいヒールの靴が履けない。
いいこと(?) : (ダニエルは異を唱えるかも。) 代わりに、かわいい
ペタンコ靴を買う言い訳になる。

悪いこと   めまいがして痛いので車の運転が出来ず出かけられない。
ノードストロムの決算セールにも行けない。)
いいこと : 歩いたり自転車に乗って出かけると、トンボが飛んでるのや、
鳥さんが虫を捕ったところに気付いたり、道の真ん中にいるカタツムリを
救うことができる。

悪いこと   グルテンが入っているかも知れないのが怖くて
あんまり外食できない。
いいこと : 二人一緒にお料理を習って家で一緒に食べられる。

いろいろな小さなことに驚いたり、喜んだりする機会が増えたと
言えるかも知れません。 今日の発見はこんなきっかけで始まりました。

(昨夜)
あ: 「売ってるアイスキャンデーって買うの怖いから、昔良くあったような、
自分の家でアイスキャンデー作れる道具が欲しいなー。」
ダ: 「うん、いいんじゃない。」
あ: 「クックスワールドで売ってると思う?」
(お向かいの調理器具屋さん。 そこでお料理教室に通ってるので
割引してもらえる)
ダ: 「見に行こう、多分その方がおいしいよ。 小さい頃うちでも
よく作ったな~。」

ありましたありました、昔ながらのアイスキャンデーメーカー。

昨日始めるにはちょっと疲れてたので、今日ゆっくり始めました。
パイナップル、ココナッツとボイズンベリーのジュースで用意万端。
当初はジュースだけで作ろうと思ったのですが、有機栽培の
ラズベリーが冷蔵庫にあったことを思い出したので・・・。

洗ってキャンデー型の中に入れるべく、そうっと手で千切ってみました。
きれいな果物だとは知っていましたが、それぞれの粒の中がこんなに
綺麗だったなんて!

ザクロみたいに(ちょっとトウモロコシの粒みたいでもあります)
ほんのり透き通って、黄色か橙色のような種が中に光っています。
すごーい。 美しさに一瞬息を呑むとはこういう感じでしょうか。

セリアック病だって分からなかったら、立ち止まってこんなことに
気付かなかったでしょうね。

こんなことと、しとしと降る雨に、今日は幸せを感じています。
アイスキャンデーをわくわく待つのは言うまでもありませんが。

Our first *very* gluten-free chai - 初めて作った絶対グルテンフリーのチャイ

(I guess chai should be normally gluten-free by definition - so it's not something to be overly proud of, but since lots of chai mixes have mysterious natural flavors, I got to have fun with this.)

In case anyone is interested, here is the recipe I followed - I added coriander for the heck of it because I had some, but that wasn't in the original recipe (the recipe is kind of a mishmash of what I found on the Web and what Scully told me). I think I might add more ginger next time since we like ginger.

Ingredients
  • 1 T fennel seeds
  • 6 green cardamom pods
  • 12 whole cloves
  • 1 cinnamon stick
  • 1/2 inch ginger, peeled and thinly sliced (that's what it said, but I might skip peeling next time...)
  • 6 black peppercorns
  • 6 coriander seeds
  • 7 C water
  • 2 T loose black tea (you could probably add more depending on what you like; stay away from delicate ones like Darjeeling for this recipe since cinnamon and ginger would overwhelm it.)
  • 3 T honey (this doesn't result in super sweet tea like the ones you might get at Starbucks - the result is more mild with spicy kick. You could put 4 T brown sugar.)
  • 1 C almond milk (any milk)

Since I can't drink regular milk, I made it with unsweetened almond milk. Scully suggested that I might add saffron to make up for the fact my plant-based milk would not be as rich as regular milk. I've always believed the European conventional wisdom that saffron is expensive, but apparently it's quite reasonable if you go to one of the Indian/Pakistani stores in the area. Learn something new every day! Next time I think I'll go to one of those to stock saffron (and other spices).

  1. Grind up spices in a mortar and pestle. (Even better if you dry roast them in a pan beforehand.)
  2. Combine spices and water in a saucepan.
  3. Boil 5 minutes.
  4. Remove from heat and steep about 10 minutes.
  5. Add the tea and bring to a second boil.
  6. Reduce the heat and simmer for 5 minutes.
  7. Strain the mixture and return it to the saucepan.
  8. Add the honey and milk, stirring to dissolve.
  9. You got 8 lovely cups of chai!
Note: Some believe fennel should be added at the last minute, after the second boil. Since we're beginners and still experimenting (and it was late), we didn't discriminate.

I'm sure there are a lot of different ways to make this. I hear each Indian household usually have their own recipe. I'm open to suggestions/tips!

P.P.S. On second try, we added a piece of star anise and a couple of strands of saffron - made the flavor round and sweet. Yummmm.

美味しい生活。

(定義からするとチャイはたいていグルテンフリーの筈なので
威張るほどの事でもないのですが、たいていのチャイミックスには
謎の調味料が入っているので、自分で楽しく作ることとあいなりました。)

興味のある方がいるかいないか分かりませんが、作ったチャイのレシピを
書き留めておきます。 コリアンダーは別に入れなくてもいいのですが、
あったから入れてみました。 そこらへんで見つけたレシピと、Scully に聞いた
ヒントの融合です。 

生姜の味が好きなので、今度は生姜をもう少し入れてみようかな。

材料
  • フェンネル(ウイキョウ)の種 大さじ1
  • カルダモンの種 6個
  • クローブ(チョウジ) 12個
  • シナモン 1本
  • 生姜 1センチほど(皮をむいて薄切りにする、と書いてありましたが、
    皮はむかなくてもいいような気もする。)
  • 黒コショウの種 6個
  • コリアンダーの種 6個
  • 水 7カップ (これはアメリカのカップなので1カップ250ml。でもお好みで)
  • 紅茶(アッサムなど、スパイスに対抗できるよう少し強めのもの) 
    大さじ2 (もう少し入れてもいいと思う。お好みで)
  • 蜂蜜 大さじ3 (黒糖 大さじ4と書いてあったのですが砂糖はあまり
    好きでないので。 甘ったるすぎずスパイスが効きつつもなおかつ
    マイルドな感じになりました。 精白糖は避けると良いようです。)
  • アーモンドミルク (または牛乳、豆乳など、お好みで) 1カップ

私は牛乳が飲めないのでアーモンドミルク(甘味料の入っていないもの)で
作ってみましたが、Scully によると、牛乳や練乳で作れない分、サフランを
入れるともう少し香りが良くなるそうです。 ヨーロッパ系の人の観念で
サフランは高価かと思っていたのですが、近所のインド系・パキスタン系の
スーパーに行けば毎日使うものなのでかなり安く手に入るそう。
いいことを知りましたー。 今度行ってみよう。

作り方
  1. スパイスをすり鉢で擂る。 (その前に乾煎りしておくともっと良い)
  2. スパイス、生姜と水を合わせて入れた鍋を火にかける。
  3. 5分沸騰させる。
  4. 火からおろして10分ほど浸しておく。
  5. 紅茶を入れてもう一回沸騰させる。
  6. 沸騰したら弱火にして5分ほど煮る。
  7. 濾して液体だけ鍋に戻す。
  8. 甘味(この場合蜂蜜)とミルクを入れて混ぜる。
  9. 8カップのおいしいチャイが出来上がり(けっこう沢山かも)。
注: フェンネルは最後の方に、2回目の沸騰をさせてから入れると良いという
説もあります。 うちは初心者だし夜遅くで面倒だったので全部いっぺんに
入れてしまいました。

きっともっといろいろな作り方があるんでしょうね。
インドの人のおうちでは、家庭によってそれぞれ作り方が
違うと聞きます。 (おふくろの味、ってやつかしら?)
なにか提案・ヒントがありましたら教えて下さい。

今週張り切ってタイプしすぎたかも・・・。 手と腕がとってもいたーい。

P.P.S. 二回目に作った際は、ハッカク(ウイキョウ)を1つと、
サフロンを少し入れてみました。 好みですが、味が丸くなって
もうちょっと甘い感じになりおいしいです。
